*For our Friday lunch date, we visited an old Favorite…Pho Van. It's hard to find really good Vietnamese food in Spokane, but this place does a nice job.
*Cowboy and I sat down and made a somewhat strict budget for the month. It's gonna be a challenge, but I think we can do it. You can check out my other February goals HERE.
*On Saturday night Cowboy made Argentine style Milanesa steaks (recipe coming soon!) and we watched the Zags play (and win!).
*We normally have waffles on Sunday mornings, but we switched it up this week with homemade Ebelskivers (aka delicious Danish round pancake balls). Fillings included chocolate, peanut butter, and peach jam. Yum.
*We had a little Superbowl party at the house on Sunday. Cowboy made meatballs for sandwiches, I made some caramel popcorn, and our friends brought more appetizers, desserts, and good times.
Yowza. We ate a lot of food the past couple of days. Off to the gym! How was your weekend?

Oh my gracious! Looks like you had such a fun foodie weekend. I've never tried Pho, but I've been wanting too! And thos elittle pancake balls sound HEAVENLY!
